All goods are carefully packed, and our responsibility ceases when we obtain a proper receipt from the transportation company. We cannot guarantee the prices given in this catalogue for any length of time. However, prices on tools and machinery are not subject to frequent changes, and our customers are therefore right in assuming that the prices in this catalogue are in general correct. We uphold quality in every instance, and are prepared to warrant every article sold. A list of food supplies which we sell will be found in this catalogue, but prices are not given, as these articles fluctuate in value so frequently that a price list is sure to be misleading and unsatisfactory. CHAPMAN & SMITH COMPANY POBTABLE GALVANIZED OVEN Made of Heavy Galvanized Steel They are adapted for hotels, restaurants, public arid private institutions, for roasting meats, poultry and baking bread, pastry, etc. They will roast at the same time as many different kinds of meat as the oven will hold, and each kind will be perfectly sweet and free from taste or smell of the others, as the gases which arise are passed off through the escape pipe at the top. For baking bread and pastry they are unequaled by any oven in the market. A small quantity of coal or wood will keep them going for hours. The heat is regulated by dampers on each side of stove and in the pipe, by which any required degree may be maintained. When there is too much heat, open the dampers as much as desired, which admits the cold air and lowers the heat at once. Our ovens are of heavy galvanized steel, made double throughout, having convenient openings, through which sand, which is a non-conductor, may be placed, thereby saving fuel, having the oven heat more even, aDd causing very little heat in the room where the oven is placed. They are always shipped without sand, to avoid paying freight on it. The stove to heat oven is made of extra heavy wrought steel, which is much more durable than cast iron. Our grates are made of heavy steel bars, with wrought angle iron front and back of each shelf, thus making them very strong. An oven to burn coal requires the stove that heats it to be made in a different manner from one that burns wood. So always state if you wish to burn wood or coal. Prices are the same. There are no parts to become disengaged from the machine, thus avoiding mislaying and the loss of such parts. 2d. The machine is made in the most substantial manner, the frame being made entirely of iron and built upon an iron base, so that there is nothing to warp or twist out of line. 3d. The freezing apparatus, consisting of one tub, one copper can and lid, and one dasher or beater, can be removed from the machine and replaced in less than half a minute, simply by sliding the sleeve which couples the lid up to the top of the slot in the sleeve wheel, and locking the same in its upper position by a slight turn of the hand, then with the other hand upon the lever attached to the dasher driving spindle, raise the same from the end of the dasher and lift the apparatus away. 4th. It can be operated either by hand, horse, or steam power, and is warranted to freeze forty quarts in thirty minutes; twenty-five quarts in twenty minutes; eighteen quarts in fifteen minutes; twelve quarts in ten minutes; and is guaranteed to freeze smoother, with less ice and salt, and one-half the labor required by any other machine now in use. Parties who are using them say they can save the price of a machine in a short time in ice and salt alone, without taking into consideration the quantity of cream — it being more than doubled when the machine is properly operated — as we have testimonials to certify. The dasher or beater attached to this machine is so constructed that it removes the frozen cream from the inner surface of the can as rapidly as formed, while the deflection in the center of the beater directs the unfrozen cream to the side of the can, so that the whole body of cream is constantly changing position, insuring a rapid conversion into the desired frozen mass. The opposite cut represents our Engine and Patent Ice Cream Freezer combined, with steam boiler attached, which occupies a floor space of 8 x 2% feet. The boiler is made of the best steel, and is capable of sustaining enormous pressure. It is provided with safety-valves, steam and water gauges, blow-off and try-cocks, injector, etc. The engine and freezer being built on the same base secures a direct connection by cut-gearing (which is perfectly noiseless), thus avoiding the use of belting, and enabling us to put these machines into much less space than any other now made.
